Simple dish and absolutely wonderful! Have fun with this one! I kept it really simple, because the flavor of the potatoes is really enhanced by the few ingredients.
Ingredients:
- New Potatoes (or Red potatoes)
- Fresh Thyme Leaves
- Black Peppercorns
- Kosher Salt
- Shallots
- Grape seed oil
Preheat oven to 350 degrees. Lightly pan fry largely chopped shallots in oil and add sliced new potatoes. Lightly salt at the beginning stage. When they start to get close to being done add coarsely ground peppercorns. Just before they are done pat away some of the excess oil and place in a baking pan, or baking sheet. I laid them in rows across the bottom of the pan, fanning them out so that while baking they would turn golden brown. Place them in a preheated oven for a about five to seven minutes, then sprinkle across the top with Thyme leaves and bake for another 3-5 minutes. Remove from oven and plate.
The potatoes tasted and looked great! The pepper and thyme potatoes looked beautiful on the plate, next to the asparagus and chicken!
